Description

To give the cheese its striking bright orange colour, annatto is added to the milk, while Penicillum roqueforti is used to create the blue-green moulding. Once moulded, the cheese is pierced to encourage veining and it is matured for two months. The soft orange paste has a creamy texture and a buttery tang.
